Decorating Tips
For an extra touch of elegance, you can drizzle melted white chocolate over the dipped macarons instead of dipping them entirely. Sprinkle some finely chopped pistachios over the chocolate before it hardens for added texture and visual appeal. You can also use edible gold leaf on a few cookies to make them even more luxurious and festive.
Ingredients:
- 3 egg whites
- A pinch of salt
- 120 g sugar
- 170 g ground almonds
- 110 g ground pistachios
- Optional: 2-3 drops of green food coloring
- 10 g pistachios, halved, for garnish
- 100g white chocolate, for dipping
Instructions:
- Preheat and prepare:
- Preheat the oven to 150°C. Line a baking sheet with baking paper.
- Make the meringue:
- Beat the egg whites with a pinch of salt until stiff. Gradually add the sugar and continue beating until stiff peaks form, making sure the mixture is glossy and stiff.
- Prepare the nut mixture:
- In a separate bowl, mix together the ground almonds and pistachios. If desired, add green food coloring for a bright color.
- Fold:
- Gently fold half of the nut mixture into the meringue, then add the remaining half, being careful not to deflate the mixture.
- Pipe:
- Transfer the mixture to a piping bag fitted with a fluted nozzle. Pipe small circles onto the prepared baking sheet. Press half a pistachio into the centre of each macaron.
- Cook:
- Bake in the preheated oven for about 20 minutes or until the macarons are cooked and lightly browned. Let cool completely on a wire rack.
- Chocolate Dip:
- Melt the white chocolate and dip the cooled macaroons in it halfway through cooking. Place them back on the baking paper to harden.
