- 250 g bagel crumbs
- 50g powdered sugar
- 150g melted butter
- Preparation of the gelatin:
- Layer of chocolate mousse:
- 150g of milk chocolate
- 100 ml heavy cream (38% fat for whipping)
- 250ml additional heavy cream, whipped separately
- 15 g gelatin mixture (half of the prepared gelatin)
- Bagel Cheesecake Mousse:
- 250 ml heavy cream (38% fat for whipping)
- 66g of sugar
- 120 g of fresh cheese (25% fat)
- 80 g ground bagel
- 15 g gelatin mixture (the other half of the prepared gelatin)
- Ganache topping:
- 100g milk chocolate
- 80g dark chocolate
- 150 ml heavy cream (38% fat for whipping)
Method:
- Prepare the base:
- Process the bagels into fine crumbs using a food processor. Mix the breadcrumbs with the melted butter and the thyme powder. Press firmly into a 24cm circle or springform pan. Refrigerate to set.
- Chocolate mousse:
- Prepare the gelatin by mixing it with water and refrigerating it. Melt the milk chocolate with 100ml of cream, then stir in half of the gelatin until smooth.
- Whip 250ml of cream until soft peaks and incorporate into the chocolate mixture. Pour over refrigerated bagel base and freeze for one hour.
- Bagel Cheesecake Mousse:
- Whip the cream, cream cheese and sugar until you have a yogurt-like consistency (not too stiff).
- Melt the remaining gelatin mixture and mix into the cream mixture with the ground bagel. Pour over the set chocolate layer and return to the freezer for three hours.
- Prepare the Ganache:
- Heat the cream and both chocolates in the microwave in short bursts until smooth.
- Pour over the frozen cake and return to the freezer to set the ganache, at least an hour.
