Ingredients:
For the carrot layer:
- 1 kg medium carrots
- 1 cup granulated sugar
- 1/2 cup water
- 50 g butter
- 1 packet of shortbread biscuits
- 1 cup chopped walnuts
- Grated coconut (for sprinkling)
For the pudding:
- 4 cups of milk
- 2 tablespoons flour
- 1.5 tablespoons cornstarch
- 5 tablespoons of sugar
- 1 sachet of vanilla sugar
- 50 g butter
Instructions:
- Prepare the carrot layer:
- Grate the carrots and place them in a saucepan.
- Add the water, butter and sugar to the carrots.
- Cook over low heat for about 20 minutes, or until carrots are tender and mixture has thickened.
- Break the shortbread biscuits into small pieces.
- Once the carrot mixture has cooled slightly, stir in the cookie pieces and chopped nuts.
- Prepare the baking dish:
- Lightly dampen your hands and use them to moisten the bottom of a Borcam or similar baking dish.
- Sprinkle a layer of shredded coconut on the bottom of the dish.
- Spread the carrot mixture evenly over the coconut layer.
- Prepare the pudding:
- In a saucepan, mix the milk, flour, cornstarch and sugar.
- Cook over medium heat, whisking constantly, until mixture thickens and comes to a boil.
- Remove from heat and stir in vanilla sugar.
- Let the mixture cool slightly, then add the butter and beat with a mixer for about 10 minutes until the mixture is smooth and creamy.
- Assemble the dessert:
- Pour the pudding over the carrot layer in the baking dish, spreading it evenly with a spatula.
- Let the dessert cool to room temperature, then refrigerate until completely set.

- Once the dessert has completely cooled and set, cut it into slices and serve.
