- 100g vegan butter
- 140 g light brown sugar
- 1 teaspoon of vanilla
- 1 tablespoon cornstarch
- 1 tablespoon of cold water
- 180 g all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 100g vegan dark chocolate
- 50g vegan white chocolate
- A few handfuls of mini vegan marshmallows
- Preheat the oven to 180°C (356°F) and line the baking sheets with parchment paper.
- In a large bowl, beat together the vegan butter, light brown sugar, and vanilla until smooth.
- In another bowl, combine the cornstarch and cold water, then stir it into the creamed mixture.
- Sift together the all-purpose flour, baking powder and baking soda, then mix until well combined.
- Stir in the vegan dark chocolate, vegan white chocolate and mini vegan marshmallows.
- Roll the mixture into 12 balls, place them on the lined baking sheets and bake for 8-10 minutes until cooked but still gooey. If in doubt, take them out sooner, as they will continue to cook when they come out of the oven.
