- 50g brown sugar (preferably dark muscovado for a deeper flavour)
- 1 egg
- 1 teaspoon vanilla extract
- 250 g all-purpose flour (T45)
- 5 g baking powder
- 2 g of salt
- 200g chocolate (half dark chocolate chunks, half dark and milk chocolate chips mixed)
- Method:
- Prepare the dough:
- In a large bowl, cream together the very soft butter and both types of sugar until well combined.
- Add the egg and vanilla extract and mix until smooth.
- Sift together flour, baking powder and salt. Stir until the dough is smooth to avoid overmixing, which can make the cookies tough.
