Ingredients:
- 6 egg yolks (120g)
- 150g caster sugar
- 500 g of mascarpone
- 320 ml of heavy cream
- 300 ml strong brewed coffee, cooled
- Optional: 5 tablespoons rum (not used in this version)
- 2 tablespoons cocoa powder for sprinkling
Instructions:
- Prepare the coffee mixture:
- Brew the coffee and let it cool completely. If you were drinking alcohol, it would be mixed with coffee. This version is alcohol-free, so continue with just the coffee.
- Prepare the mascarpone mixture:
- In a large bowl, whisk the egg yolks and sugar until light and fluffy.
- Add the mascarpone and beat until smooth and well incorporated.
- In another bowl, whip the heavy cream until it forms stiff peaks.
- Gently fold the whipped cream into the mascarpone mixture to keep the mixture light and airy.
- Assemble the tiramisu:
- Quickly dip each boudoir into the cooled coffee. Place a layer of soaked ladyfingers at the bottom of a 35×23 cm dish.
- Spread half of the mascarpone mixture on the ladyfingers.
- Add another layer of coffee-soaked ladyfingers, then cover with the remaining mascarpone mixture.
- Smooth the top with a spatula.
- Cool and serve:
- Cover and refrigerate the tiramisu for at least 4 hours, preferably overnight, to allow the flavors to meld.
- Just before serving, sprinkle the top evenly with cocoa powder.
