For an elegant finish, serve the molten chocolate cake with a dusting of icing sugar or a drizzle of chocolate sauce. You can also top it with a fresh berry, a dollop of whipped cream or a scoop of vanilla ice cream to add a touch of contrast to the rich chocolate flavour. For an extra indulgence, place a piece of white chocolate on top of the cake once it comes out of the oven, allowing it to melt slightly before serving. Arrange the cakes on an elegant platter or tray for an even more elegant presentation.
Ingredients:
- 225 g butter
- 200g high quality dark chocolate (about 2 bars)
- 5 large eggs
- 1/2 cup granulated sugar (100 g)
- 3/4 cup all-purpose flour (105 g)
- 100g high quality white chocolate (about 1 bar)
Instructions:
- Prepare the chocolate mixture: Preheat your oven to 180°C (350°F), with the heat on high and low. In a saucepan over medium heat, melt the butter completely. Once melted, add the chopped dark chocolate, reduce the heat to low and stir until the chocolate is completely melted and the mixture is smooth. Set aside.
- Mix the dough: In a separate bowl, whisk the eggs and sugar for about 3 minutes until combined and slightly foamy. Add the flour to the egg mixture and whisk until fully incorporated. Gradually add the chocolate mixture to the egg and flour mixture in three additions, whisking thoroughly after each addition until the mixture is smooth.
- Prepare the mussels: Lightly butter your molds with softened or melted butter. This recipe is suitable for 4-5 small crown molds (8-10 cm in diameter) or 6-7 classic ceramic ramekins. Fill each mold halfway with the batter.
- Add the white chocolate: Place 2 or more large squares of white chocolate in the center of each mold, pressing them lightly into the batter. Add a little more batter if necessary, but make sure the molds are only half full.
- Cook: Place the pans in the preheated oven and bake for 10 minutes. If your pans are smaller, reduce the baking time to 8 minutes. The cakes should look slightly undercooked in the center when they come out of the oven, which creates the soft center. If you prefer a firmer cake, bake for an additional 2 minutes.
- Let cool and serve: Let the cakes cool in the pans for a few minutes before attempting to remove them. If using ring pans, wait until the cakes have cooled slightly before carefully removing the rings. For an extra touch, add a piece of white chocolate to the top of each cake as soon as it comes out of the oven and let it melt in the residual heat.
