Ingredients:
- Pastry :
- 75g cold butter
- 75 g sugar
- 1 egg
- 170g flour
- 1/2 teaspoon baking powder
- Filling:
- 500 g of fromage blanc
- 100 g sugar
- 30 g cornstarch
- 2 egg yolks
- 2 egg whites
- 200 ml whipped cream
- 100 g chocolate chips
- Prepare the shortcrust pastry:
- In a bowl, knead the cold butter, sugar, egg, flour and baking powder until smooth. Press the dough into the bottom of a 26cm springform pan, making sure it is evenly distributed. Prick the surface with a fork and place in the fridge to chill.
- Prepare the filling:
- In a separate bowl, mix together the cottage cheese, sugar, cornstarch and egg yolks until smooth.
- In another bowl, beat the egg whites until stiff peaks form, then gently fold them into the cream cheese mixture.
- In a third bowl, beat the whipping cream until stiff and fold it into the cream cheese mixture as well.
- Fold in the chocolate chips until evenly distributed and pour the filling over the cooled shortcrust pastry in the springform pan.
- Bake the cheesecake:
- Preheat the oven to 160°C (320°F) fan-assisted. Bake the cheesecake for about 50 minutes, or until cooked through and lightly browned on top.

- Allow the cheesecake to cool completely in the pan. Once cooled, remove from the pan and dust with icing sugar before serving.
