- 250g mascarpone or Philadelphia cream cheese (or a mixture of both)
- 150 g granulated sugar
- 100g of fresh cream
- 60 g unsalted butter
- 6 large eggs, at room temperature
- 50 g all-purpose flour
- 30 g cornstarch
- 1 teaspoon baking powder
- 1/2 vanilla pod or 1 sachet of vanillin
- A pinch of salt
- Powdered sugar for dusting
Instructions:
- Prepare the dough:
- Preheat your oven to 200°C (390°F).
- In a large bowl, beat 250g mascarpone (or Philadelphia) with 150g caster sugar until smooth and creamy.
- Add 100g of crème fraîche and 60g of melted unsalted butter to the mixture. Beat until well combined.
- Crack 6 large eggs, placing the whites in one bowl and the yolks in another.
- Add the yolks to the cream cheese mixture, one at a time, beating well after each addition.
- Sift together 50g all-purpose flour, 30g cornstarch and 1 tsp baking powder. Gradually stir this dry mixture into the cream cheese mixture until well combined.
- Scrape the seeds from half a vanilla pod (or add 1 sachet of vanillin) and a pinch of salt into the dough. Mix gently.
- Whisk the egg whites:
- In a clean bowl, whisk the egg whites until soft peaks form. Gently fold the whipped egg whites into the batter in three additions, being careful not to deflate the mixture.
- Bake the cheesecake:
- Pour the batter into a greased and lined cake tin (preferably springform) and smooth the top.
- Place the cake in the preheated oven and bake at 200°C (390°F) for 15 minutes.
- After 15 minutes, reduce the oven temperature to 160°C (320°F) and cook for another 15 minutes.
- Once cooked, turn off the oven and leave the cheesecake inside, with the door closed, for 40 minutes. This gradual cooling process helps prevent the cake from cracking.
