Ingredients:
For the crust:
- 125 grams of softened butter
- 1 egg
- 1/2 cup powdered sugar
- 1 sachet vanilla extract
- 1/2 packet of baking powder
- 2 cups all-purpose flour (add more if needed)
For the custard:
- 2 cups of milk
- 2 tablespoons flour
- 1 teaspoon cornstarch
- A little less than half a cup of sugar
- 1 sachet vanilla extract
- 1 tablespoon butter
For the plum layer:
- 700 grams of plums
- 1.5 tablespoons sugar
- 1 teaspoon cinnamon
- 1/4 lemon, squeezed
For the crumble topping:
- 75 grams of cold butter
- 1/2 cup powdered sugar
- 1.5 cups all-purpose flour
- 1/2 sachet vanilla extract
- Slivered almonds
Instructions:
- Prepare the crust:
- In a bowl, mix together the softened butter, egg, icing sugar, vanilla extract and baking powder. Gradually add the flour, mixing until the dough is soft and not sticky. If the dough is too sticky, add a little more flour until it reaches the desired consistency.
- Preheat your oven to 180°C. Butter a 30×20 cm tart pan and press the dough evenly into the bottom and up the sides of the pan. Prick the bottom of the tart with a fork to prevent it from puffing up during cooking.
- Bake the crust in the preheated oven until lightly browned, about 10 to 15 minutes. Be careful not to overbake it as it will continue to cook later with the filling. Remove from the oven and let cool.
- Prepare the custard:
- In a saucepan, whisk together milk, flour, cornstarch and sugar. Cook over medium heat, stirring constantly, until mixture thickens to a custard-like consistency.
- Remove the pan from the heat and stir in the butter and vanilla extract until well incorporated. Pour the custard over the cooled pie crust, spreading it evenly.
- Prepare the plum layer:
- Wash the plums, remove the pits and cut them into quarters. In a bowl, toss the plum slices with the sugar, cinnamon and lemon juice until well coated.
- Arrange the plums tightly on the layer of custard, covering the entire surface.
- Prepare the crumble topping:
- In a bowl, combine cold butter, icing sugar, flour and vanilla extract. Mix with your fingers or a pastry blender until the mixture resembles coarse crumbs.
- Sprinkle the crumble topping generously over the plums, covering them completely. Scatter flaked almonds on top for added texture and flavour.
- Bake the pie:
- Return the tart to the oven and bake at 180°C (356°F) until the crumble is golden and the plums are tender, about 25 to 30 minutes.
- Remove the pie from the oven and let it cool completely. For best flavor, refrigerate the pie for at least 2 to 3 hours, or overnight.
- Serve and enjoy:
- Once cooled, cut the tart into slices and serve on a pretty platter. The tart can be enjoyed alone or accompanied by whipped cream or vanilla ice cream.
