- 500 g all-purpose flour (T45)
- 200 g of semi-salted butter
- 40 g of brown sugar or cane sugar
- 200 g of milk
- 2 eggs
- 7 g instant dry yeast
- 150 g pearl sugar (large sugar crystals)
Instructions:
- Prepare the dough:
- Heat the milk gently (about 20 seconds in the microwave) until lukewarm. Pour the warm milk into the bowl of a stand mixer and dissolve the instant yeast in it.
- Add the flour, brown sugar and eggs to the bowl. Mix on low speed for about 5 minutes until the ingredients are well combined and a dough forms.
- Gradually add the softened butter in small pieces, continuing to mix on low speed for another 10 minutes until the dough is smooth and elastic.
- First climb:
- Shape the dough into a ball and cover the bowl with a clean tea towel. Let the dough rise at room temperature for about 1 hour and 30 minutes, or until doubled in size.
- Add the pearl sugar:
- Once the dough has risen, add the pearl sugar. Press the dough lightly to release some air (degassing) and incorporate the sugar using a spatula until it is well distributed.
