- 250 g of soft butter
- 150 g) sugar
- Grated zest of 1/2 lemon
- 4 egg yolks
- 300 g cornstarch (maicena)
- 200g flour (type 0000)
- 2 teaspoons baking powder (8 g)
- 1 teaspoon vanilla extract
- 1 teaspoon of cognac
- 500 g of dulce de leche for the topping
- Grated coconut, as needed
- Preheat the oven to 180°C. Line a baking sheet with baking paper.
- In a bowl, cream the butter and sugar until light and fluffy.
- Add the egg yolks one by one, making sure they are well incorporated. Add the vanilla, brandy and lemon zest.
- Sift together the cornstarch, flour and baking powder. Gradually stir into the wet ingredients until smooth.
- Roll out the dough on a lightly floured work surface and cut it into small rounds using a cookie cutter.
- Place the rounds on the prepared baking sheet and bake for 12 to 15 minutes or until cooked through.
