- Crust Ingredients:
- 150 g all-purpose flour
- 100 g unsalted butter, chilled
- 3 tablespoons of sour cream
- 1 egg yolk
- 1 tablespoon of sugar
- 2 tablespoons of cold water
- 5g of baking powder
- 2g of salt
- Custard filling ingredients:
- 400 ml of milk
- 2 egg yolks
- 40g cornstarch
- 100g of sugar
- A pinch of vanilla extract
- Filling:
- 2 large apples, peeled and cut into cubes
- Preparation:
- In a bowl, mix the egg yolk, sugar, salt and sour cream. Add the cooled butter.
- Sift the flour and baking powder. Add cold water and knead until the dough becomes soft. Divide the dough into two parts, 70% and 30%, and freeze for 30 minutes.
- For the custard, whisk together the milk, egg yolks, sugar and vanilla in a saucepan. Heat over medium heat, gradually incorporating the cornstarch until the mixture thickens.
- Roll out the larger portion of dough to fit a 16cm pie dish. Arrange the apple cubes on the crust. Pour the custard mixture over the apples.
