Ingredients:
- Chocolate sponge:
- 6 eggs, separated
- 200g of sugar
- 200g flour
- 50g unsweetened cocoa powder
- Whipped cream :
- 510g heavy cream
- 250g mascarpone
- 50g powdered sugar
- Seeds from 1/2 vanilla pod
- Additional:
- Cherries with Kirsch
- Kirsch syrup for dipping the cake
- Chocolate shavings for decoration
Instructions:
- Prepare the sponge:
- Separate the egg whites and yolks. Beat the egg whites until stiff, gradually adding the sugar until stiff peaks form.
- Gently incorporate the yolks, then sift in the flour and cocoa. Fold carefully to keep the mixture aerated.
- Pour into a 20 cm high lined cake tin. Bake at 180°C (356°F) for 1 hour. Check the cooking with a knife. Wrap the warm cake in cling film and let it cool overnight. Cut it into three equal layers the next day.
- Whipped cream :
- Whip the heavy cream, mascarpone, caster sugar and vanilla seeds until stiff but silky.
- Assemble the cake:
- Soak each layer of sponge cake with kirsch syrup.
- On the first layer, pipe a round of whipped cream, place a layer of cream in the center and distribute the drained kirsch cherries.
- Place the second sponge cake on top and repeat the filling process.
- Add the last layer of sponge cake and cover the entire cake with whipped cream, smoothing the surface.
- Decorate:
- Apply chocolate shavings to the sides and edges of the cake.
- Use the rest of the whipped cream and the cherries to decorate the top.
