- 380 ml of milk
- 100 g of sugar
- 100g butter
- 30 g of fresh yeast
- 2 eggs
- 720 g all-purpose flour

- 150 g brown sugar (preferably sugar cane)
- 4 teaspoons of cinnamon
For the icing:
- 100 g of fresh cheese
- 60g heavy cream (plus an extra 80g to pour between the rolls)
- 160g caster sugar
Instructions:
- Prepare the dough:
In a saucepan, combine the milk, butter and sugar. Heat over low heat until the butter and sugar are melted, but do not let it boil. Transfer the mixture to a large bowl and let it cool until lukewarm, not hot. Once cooled, crumble the yeast, stir, cover with a towel and let sit for 15 to 20 minutes to activate the yeast. - Mix the dough:
Once the yeast is activated, add the eggs and mix until well combined. Gradually add the flour and salt, kneading until the dough is smooth and slightly sticky. Cover the dough and let it rise in a warm place for about 1 hour or until doubled in size. - Prepare the filling:
While the dough is rising, prepare the filling by mixing the softened butter, brown sugar and cinnamon in a bowl until well combined. - Shape the rolls:
Once the dough has risen, transfer it to a floured surface and knead it gently. Roll out the dough into a large rectangle (approximately 40×50 cm). Spread the cinnamon-sugar topping evenly over the dough. Roll the dough into a log and cut it into equal pieces. - Second climb:
