This homemade Snickers ice cream bar recipe is gluten-free, dairy-free, and sugar-free, making it a healthier option that will leave you happy and satisfied.
Necessary equipment

- High speed mixer
- 8×5 loaf pan
- Parchment
- Mixing bowls
- Spatula
- Knife
- Microwave or bain-marie safe bowl
Ingredients:
Ice cream layer:
- 3/4 cup + 2 tbsp (7 oz) canned full-fat coconut milk
- 1/4 cup natural peanut butter
- 2 tablespoons raw honey or pure maple/agave syrup
- 1 teaspoon pure vanilla extract
- 1/4 teaspoon salt
Peanut Butter Caramel:
- 1/2 cup natural peanut butter
- 2 tablespoons honey or pure maple/agave syrup
- 1/8 teaspoon salt
- 3 tablespoons canned full fat coconut milk
- Peanuts (to garnish the caramel)
Chocolate coating:
- 6-9 oz dark or semi-sweet chocolate (dairy-free and sugar-free)
- 1 to 2 teaspoons coconut oil (optional)
Instructions:
- Prepare the ice cream layer:
- Add coconut milk, peanut butter, honey or maple/agave syrup, vanilla extract, and salt to a high-speed blender. Blend until creamy and smooth.
- Pour the mixture into an 8×5 loaf pan, lined with parchment paper. Place the pan in the freezer for several hours until firm.
- Prepare the peanut butter caramel:
- In a bowl, combine peanut butter, honey or maple/agave syrup, salt and coconut milk. Blend until smooth.
- Assemble the bars:
- Once the ice cream layer is frozen, spread the peanut butter caramel evenly over it.

- Place the cake tin back in the freezer for a few hours until the caramel has set.
- Slice and coat with chocolate:
- Remove the frozen mixture from the freezer and cut into 8 bars.

- Coat each bar in melted chocolate and return to the freezer until the chocolate has hardened.
- Serve:
- Once the chocolate has hardened, remove the bars from the freezer. Let them sit for a few minutes before eating so that the ice cream layer becomes creamier.
