This homemade Snickers ice cream bar recipe is gluten-free, dairy-free, and sugar-free, making it a healthier option that will leave you happy and satisfied.

  • 8×5 loaf pan
  • Parchment
  • Mixing bowls

Ingredients:

Ice cream layer:

  • 3/4 cup + 2 tbsp (7 oz) canned full-fat coconut milk
  • 1/4 cup natural peanut butter
  • 2 tablespoons raw honey or pure maple/agave syrup
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon salt

Peanut Butter Caramel:

  • 1/2 cup natural peanut butter
  • 2 tablespoons honey or pure maple/agave syrup
  • 1/8 teaspoon salt
  • 3 tablespoons canned full fat coconut milk
  • Peanuts (to garnish the caramel)

Chocolate coating:

  • 6-9 oz dark or semi-sweet chocolate (dairy-free and sugar-free)
  • 1 to 2 teaspoons coconut oil (optional)

Instructions:

  1. Prepare the ice cream layer:
    • Add coconut milk, peanut butter, honey or maple/agave syrup, vanilla extract, and salt to a high-speed blender. Blend until creamy and smooth.
    • Pour the mixture into an 8×5 loaf pan, lined with parchment paper. Place the pan in the freezer for several hours until firm.
  2. Prepare the peanut butter caramel:
    • In a bowl, combine peanut butter, honey or maple/agave syrup, salt and coconut milk. Blend until smooth.
  3. Assemble the bars:
    • Once the ice cream layer is frozen, spread the peanut butter caramel evenly over it.
