- 100g cold butter
- 240 g flour
- 1 egg yolk
- 40-50 ml of ice water
- A pinch of salt
- 50 g caster sugar
- 1/2 teaspoon baking powder
- Filling:
- 400 g of fresh cheese
- 300g cream (33% fat)
- 2 eggs
- 80-100g sugar
- Vanilla extract to taste
- 1 tablespoon cornstarch
- 300-400g blueberries
Prepare the dough:
- Mix flour, salt, icing sugar and baking powder. Add cold diced butter and rub with your fingers to form crumbs.
- Stir in egg yolk and gradually add ice water to form a soft dough. Wrap in plastic wrap and chill for 30 minutes.
Prepare the filling:
- In a bowl, whisk together the cream cheese, heavy cream, eggs, sugar, vanilla, and cornstarch until smooth. Avoid using a mixer to prevent extra bubbles; a whisk should be enough to remove any lumps.
