Ingredients:
For the dough:
- 250 g all-purpose flour
- 50 g sugar
- 1/2 teaspoon salt
- 1 teaspoon dry yeast
- 100 ml of hot milk
- 1 egg (at room temperature)
- 50 g of soft butter
- Zest of 1 organic lemon
For the lemon glaze:
- 100 g caster sugar
- 2-3 tablespoons freshly squeezed lemon juice
- Optional: additional lemon zest
Instructions:
- Prepare the dough:
- In a large bowl, sift the flour and create a well in the center. Add the dry yeast to the well, sprinkle with a pinch of sugar, and pour about 2 tablespoons of warm milk over the yeast. Cover the bowl and let the yeast activate for about 10 minutes, until foamy.
- Mix the dough:
- Once the yeast is activated, add the remaining sugar, salt, egg, softened butter and lemon zest to the bowl. Pour in the remaining milk and mix until you have a smooth, elastic dough.
- Let the dough rise:
- Cover the dough with a clean cloth and let it rise in a warm place for about 1 hour, or until doubled in size.
- Shape the buns:
- Once the dough has risen, knead it lightly on a floured work surface and divide it into 12 equal pieces. Shape each piece into a ball and place them on a baking sheet lined with parchment paper, leaving space between each piece. Cover and let rest for another 30 minutes.
