Ingredients:
- For the bread :
- 300 g flour
- 250 g sugar
- 1 teaspoon lemon zest
- 1 teaspoon baking powder
- A good pinch of salt
- 1 sachet of vanilla sugar
- 50 ml of oil
- 50 ml of milk
- 3 eggs
- 80 ml lemon juice
- 180 g of soft butter
- 50 ml of mineral water
- For the icing:
- 200 g caster sugar
- A little dash of lemon juice
- Preheat your oven to 160°C with fan-assisted heat (or 180°C without fan-assisted heat).
- In a bowl, mix together flour, sugar, lemon zest, baking powder, salt, vanilla sugar, oil, milk, eggs, lemon juice and softened butter. Beat until creamy.
- Gently add the mineral water, taking care not to overmix to avoid obtaining a dense cake.
- Pour the batter into a greased cake tin and smooth the top.
- Bake for about 1 hour or until a skewer inserted in the center comes out clean.
- For the glaze, mix the icing sugar with a little lemon juice until smooth. Once the bread has cooled completely, drizzle or spread the glaze over the top.
