Recipe:
Ingredients:
- 450g all-purpose flour (00 flour)
- 300g of jam of your choice
- 150 ml of milk
- 100g caster sugar
- 75 ml of vegetable oil
- 75g raisins
- 5g fresh brewer’s yeast
- 2 eggs
- Grated zest of 1 orange
- Grated zest of 1 lemon
- 1 pinch of salt
- Powdered sugar for sprinkling
Instructions:
- Prepare the dough: In a large bowl, combine the flour, sugar and eggs. Dissolve the fresh brewer’s yeast in a little lukewarm milk (taken from the total quantity) and add it to the flour mixture. Gradually add the rest of the milk, the orange zest, the lemon zest and mix everything with a fork until you obtain a soft dough.
- Add the oil and salt: Stir in the vegetable oil and a pinch of salt, making sure all ingredients are well combined. The dough will be soft and slightly sticky. Cover the bowl with a towel and let the dough rise in a warm place for about 2 hours, or until doubled in size.
- Soak the raisins: While the dough is rising, soak the raisins in cold water for about 30 minutes. Drain and dry them before using them.
- Shape the brioche: Once the dough has risen, roll it out on a floured surface. Roll out the dough into a rectangle approximately 0.5 cm thick. Spread your jam evenly over the entire surface of the dough, then sprinkle the soaked and drained raisins on top. Roll out the dough into a log, sealing the edges to prevent the filling from overflowing. You can either leave it as a single log or twist it into a braid shape for a more decorative look.
- Second climb: Place the brioche in a greased and floured baking dish (or two smaller pans if you prefer). Brush the surface with a little milk and leave to rise for another hour.
- Cook: Preheat your oven to 180°C (350°F). Bake the brioche for about 40 minutes, or until golden brown and a toothpick inserted in the center comes out clean. If the top starts to brown too quickly, cover it lightly with foil.
- Cool and serve: Once cooked, let the brioche cool slightly before sprinkling it with powdered sugar. Slice and enjoy!
This No-knead brioche with jam and raisins is a deliciously soft and sweet bread, perfect for all occasions. Serve it hot and enjoy the cozy, comforting flavors of this homemade treat. Appreciate!
