- 80 g unsalted butter, melted
- 50 g of whole milk
- 200 g all-purpose flour
- 150 g granulated sugar
- 50 g of brown sugar
- 1/4 teaspoon baking soda
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 150 g diced peaches
For the crumble:
- 75 g granulated sugar
- 55 g unsalted butter, melted
- 80 g all-purpose flour
- 1/4 teaspoon ground cinnamon
- A pinch of salt
Instructions:
- Prepare the muffins:
- Preheat your oven to 220°C (425°F).
- In a large bowl, mix together eggs, Greek yogurt, melted butter and milk until smooth.
- Stir in flour, granulated sugar, brown sugar, baking soda, cinnamon and salt until well combined.
- Gently fold in the diced peaches, then set the batter aside.
- Make the crumble:
- In a separate bowl, mix together the granulated sugar and melted butter.
- Add the flour, cinnamon and a pinch of salt, mixing until the mixture becomes crumbly.
