Ingredients:
- 250 ml of hot milk
- 10 g yeast
- 1 tablespoon of sugar
- 250 g of crème fraîche
- 60 g melted butter
- 1/2 teaspoon salt
- 1 egg
- 700-800 g flour (more or less 50 g, added gradually)
- 2 tablespoons extra sugar
For the garnish:
- replaces the word nice with emptypping of your choice: chocolate, Nutella, fromage blanc, raisins, cocoa, cinnamon, etc.
- Ready-made poppy seed filling (used in this version)
For the egg wash:
- Prepare the dough: In a large bowl, combine warm milk, yeast, and 1 tablespoon sugar. Stir gently and let mixture sit for about 10 minutes until foamy, indicating yeast is active. Add sour cream, melted butter, salt, and egg to yeast mixture, stirring until well combined.
- Add the flour:Gradually add the flour to the wet ingredients, starting with 700g and mixing until you have a soft dough. The dough should be slightly sticky but manageable. If necessary, add up to 50g more flour to get the right consistency. Knead the dough on a lightly floured surface for about 5-7 minutes until it becomes smooth and elastic.
- Let the dough rise: Place the dough in a greased bowl, cover with a clean tea towel and let rise in a warm place for about 1 to 1.5 hours, or until doubled in size.
- Shaping the buns:Once the dough has risen, flatten it to release the air and divide it into equal portions. Roll each portion into a ball and flatten it slightly. Add your desired filling to the center, then fold the dough over the filling, pinching the edges to seal. Shape the filled dough into buns and place them on a baking sheet lined with parchment paper.
- Second ascent: Cover the buns with a tea towel and let them rise for another 30 minutes. This second rise will ensure that the buns are light and fluffy.
- Prepare the egg wash: In a small bowl, whisk together the egg yolk and milk. Once the buns have risen, gently brush them with egg wash to give them a shiny, golden finish.
- Bake the buns: Preheat your oven to 350°F (180°C). Bake the buns for 30 to 40 minutes, or until they are golden brown and sound hollow when tapped on the bottom. Baking time may vary slightly depending on the size of the buns and your oven.
- Let cool and serve:Once baked, remove the buns from the oven and let them cool slightly on a wire rack. Serve them warm or at room temperature, with or without additional toppings such as icing or frosting.
