- 190 g all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda

- 120 ml of milk
- 1 teaspoon lemon juice
- 2 eggs
- 50 g unsalted butter, softened
- 40 ml avocado oil
- 150 g granulated sugar
- 1/2 tablespoon vanilla bean paste
- For the mascarpone cream:
- 200 ml whipping cream
- 30 g caster sugar
- 225 g mascarpone
- 1 tablespoon vanilla extract
- For the mixed berry jam:
- 1 package frozen mixed berries
- 2 tablespoons coconut sugar
Directions:
- Prepare the cake:
- Preheat your oven to 350°F (177°C). Line a 7-inch cake pan with parchment paper.
- In a small bowl, mix milk and lemon juice. Set aside to curdle.
- In a large bowl, whisk together flour, baking powder, baking soda and salt.
- In another bowl, beat the butter and sugar until fluffy. Stir in the avocado oil, then the eggs and vanilla bean paste.
- Alternately add the dry ingredients and the curdled milk to the wet mixture, mixing gently with a spatula.
- Pour the batter into the prepared pan and bake for 25 to 40 minutes or until a toothpick inserted comes out clean.
- Let the cake cool completely.
- Prepare the icing:
- Whip the cream, icing sugar, mascarpone and vanilla extract until stiff peaks form.
- Prepare the berry jam:
- In a saucepan, combine frozen mixed berries and coconut sugar. Cook over medium-high heat until thickened.
