- Ingredients:
- 100 g white chocolate
- 50 g unsalted butter
- 100 g (1/2 cup) caster sugar
- 1 large egg
- 1 teaspoon red velvet emulsion or food coloring
- 1 teaspoon of white vinegar
- 120 g (1 cup) all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 8 g (1 tbsp) cocoa powder
- Sea salt for sprinkling
- Instructions:
- Preheat your oven to 175°C (350°F) and line a baking sheet with parchment paper.
- Melt white chocolate and butter together in a saucepan over low heat or in the microwave, stirring until smooth. Let cool slightly.
- In a bowl, whisk together the cooled chocolate mixture, powdered sugar and egg until well combined.
- Add the red velvet emulsion and white vinegar.
- Sift together flour, baking powder, cocoa powder and salt, mixing until no streaks remain.
- Using a 4cm spoon, spoon the batter onto the prepared baking sheet, spacing the cookies well apart to allow for spreading.
- Sprinkle a little sea salt on each cookie before baking.
- Bake for 10 to 12 minutes or until edges are set but center is still soft.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
