For Snack Bars:
- 18 Medjool dates, pitted
- 1 cup roasted pecans
- 2 tablespoons of natural maple syrup
- 1/4 cup chocolate chips
- 2 tablespoons of cocoa powder
For the chocolate coating:
- 100g dark chocolate
- 1 tablespoon of coconut oil
Method:
- Prepare the mixture: In a food processor, combine pitted dates, maple syrup and cocoa powder until well combined. Transfer the mixture to a bowl, add the chopped pecans and chocolate chips and mix lightly. Press the mixture firmly into a mold and freeze for about 1.5 hours.
- Slice the bars: Take the mixture out of the freezer and cut it into equal sized bars.
- Chocolate coating: Melt the dark chocolate and coconut oil in the microwave in short bursts, stirring between each burst until smooth. Dip the bars into the chocolate using a fork, letting the excess chocolate drip off. Place coated bars on parchment paper.
