Hearty Lasagna Soup

Ingredients:

2 tablespoons of olive oil
1/2 pound ground beef
1/2 pound chopped Italian sausage
1 cup diced yellow onion
3 cloves of garlic, chopped
2 tablespoons of tomato paste
1 jar of marinara sauce (your favorite brand)
4 cups chicken or beef broth
6-7 lasagna noodles, broken into pieces
A handful of fresh baby spinach
Chopped fresh flat-leaf parsley
Seasonings: salt, pepper, 1/2 teaspoon fennel seeds, 1/2 teaspoon Italian seasoning, a pinch of red pepper flakes and garlic seasoning
Optional ricotta mixture: 1/2 cup ricotta cheese, 1/4 cup grated Parmesan, 1 egg, chopped parsley, pinch of nutmeg, salt and pepper to taste
Mozzarella and parmesan for garnish
Fresh basil leaves for decoration

In a large pot or deep skillet, heat the olive oil over medium heat and brown the ground beef and Italian sausage. Drain any excess oil if necessary.
Set the meat aside, add a little more olive oil and fry the onion until translucent. Add the minced garlic and cook until fragrant.
Stir in the tomato paste, then pour in the marinara sauce and broth. Bring the mixture to a boil.
Add the broken lasagna noodles to the pan, along with the spinach and parsley. Stir and cook until the noodles are al dente.
If using the optional ricotta mixture, combine the ricotta, Parmesan, egg, parsley, nutmeg, salt and pepper in a bowl. Drop spoonfuls of this mixture into the soup, cover and cook for another 5 minutes. Alternatively, a drizzle of heavy cream can be used instead.
