Ingredients:
- Egg yolks: 4
- Granulated sugar: ½ cup
- A pinch of salt
- Milk: 1 cup (220g)
- Heavy cream: 1 ½ cups (360 g)
- Vanilla pod or extract: 1 pod or ½ teaspoon
- Dulce de Leche: 2/3 cup, divided
Instructions:
- Custard base:
- Whisk egg yolks, salt and sugar in a bowl.
- Heat the milk, heavy cream and vanilla in a saucepan until hot but not boiling.
- Gradually pour half of the hot milk into the egg mixture, whisking continuously.
- Mix the tempered egg mixture with the remaining milk mixture in the saucepan.
- Cook over low heat, stirring, until it reaches 175°F or is thick enough to coat a spoon.
- Pass the custard through a fine sieve and leave to cool to room temperature. Refrigerate it for at least 6 hours, preferably overnight.
- Churning the ice cream:
- Pour the cooled custard into an ice cream maker.
- Add 1/3 cup dulce de leche.
- Churn according to the ice cream maker's instructions.
- Assembly :
- Transfer the churned ice cream to a saucepan.
- Stir in the remaining 1/3 cup dulce de leche with a wooden spoon.
- Freeze for at least 2 hours until set.
- Portion:
- Pour the ice cream into a cup.
- Create a well in the center with a spoon.
- Pour a glass of hot espresso into the well.
- Serve immediately, accompanied by biscuits or chocolate of your choice.
