Ingredients:
- 140 g all-purpose flour
- 200g of sugar
- 4 eggs
- 1/2 teaspoon baking powder
For the cream:
- 500 g of mascarpone
- 100 ml heavy cream
- 4 tablespoons of powdered sugar
For the soaking mixture:
- 150 ml almond milk
- 1 tablespoon of raspberry jam

- Raspberry jam for layering
Instructions:
- Start by beating the eggs for 2 minutes. Add the sugar and continue beating for a further 6 minutes until the mixture is fluffy and resembles a light meringue.
- Sift in the flour and baking powder, mixing thoroughly to make sure there are no lumps.
- Pour the batter into a greased baking pan and bake in a preheated oven at 180°C (356°F) for 28 to 30 minutes.
- While the cake is baking, prepare the cream filling by whisking together the mascarpone, heavy cream and powdered sugar until smooth.
- Once the cake is baked, let it cool completely. Cut it horizontally into two layers.
- Prepare the soaking mixture by mixing the almond milk with a tablespoon of raspberry jam. Use a kitchen brush to dip each cut side of the cake layers.
- Start assembling the cake by placing the bottom layer on a plate, generously spread the mascarpone cream on top, then add a layer of raspberry jam.
- Place the second layer on top, and cover the entire cake with the remaining mascarpone cream.
