    • 400 g caster sugar
    • 150 g of honey
    • 100 ml of water
    • 2 egg whites
    • 300 g almonds
    • 100 g pistachios
    • 15 g freeze-dried raspberries

    1. Blanch the almonds in boiling water for 5 minutes, peel them then roast them in the oven at 170°C for 12 minutes.
    2. Line a 25×12 cm mold with baking paper and lightly grease with vegetable oil.
    3. Mix the almonds, pistachios and raspberries in a bowl and set aside near the mold.
    4. In a saucepan, mix the powdered sugar, honey and water. Heat until the syrup reaches 110°C, then start beating the egg whites at medium speed. When the syrup reaches 138°C, remove from the heat and slowly pour over the beaten egg whites. Add the orange zest and continue beating until the mixture becomes dull.
    5. Stir in walnuts and raspberries, pour into prepared pan, spread evenly and refrigerate for several hours.
