Ingredients:
- 150 grams of all-purpose flour
- 120 grams of potato starch (or cornstarch)
- 3 whole eggs
- 160 grams of granulated sugar
- 120 grams of soft butter (or 90 ml of sunflower oil)
- 75 grams of milk at room temperature
- 1 tablespoon of vanilla extract or a packet of vanilla sugar
- 1 sachet of baking powder
- A pinch of salt
- Powdered sugar for sprinkling
Instructions:
- Start by creaming the soft butter with the sugar and vanilla (and optionally the grated lemon zest) at high speed for 5 minutes until the mixture is foamy and light in color.
- Add the eggs one at a time, continuing to beat well after each addition until each is completely incorporated.
- Gradually add the milk, making sure it is not cold, and continue beating until the mixture is smooth and combined.
- Sift together the flour, starch and baking powder, then gently fold these dry ingredients into the wet mixture using a spatula or on low speed on your mixer, making sure no lumps remain.
- Pour the dough into a well buttered and floured 20cm cake tin.
- Bake in a preheated oven at 175 degrees Celsius (347 degrees Fahrenheit) for about 30 to 35 minutes, or until the cake is golden brown on top and a toothpick inserted in the center comes out clean.
- Let the cake cool completely before dusting with powdered sugar.
