- 500 grams of mascarpone
- 2 eggs
- 25 grams of cornstarch
- 100 ml heavy cream
- 70 grams of sugar
- Juice of half a lemon
- Vanilla extract to taste

- 1/2 cup water
- 70 grams of powdered sugar
- 1 tablespoon cornstarch
- Additional berries for decoration
Instructions:
- Preheat a fan oven to 160°C (320°F). Line an 18/20 cm cake mold with previously soaked and wrung out baking paper.
- In a bowl, mix the eggs with the sugar and vanilla extract. Add the lemon juice and cornstarch, then stir in the mascarpone and heavy cream until the mixture is smooth and uniform.
- Pour the batter into the prepared cake pan and bake for 55-60 minutes. Turn off the oven and let the cake cool with the door slightly ajar, then refrigerate.
