- 340g Oreo cookies (2 packages)
- 2 tablespoons melted butter
- 4 eggs, room temperature
- 3/4 cup sugar
- 1kg cream cheese, room temperature
- 200ml heavy cream (30% or 36%), chilled
- 1 heaping tablespoon each of all-purpose flour and potato starch
- A pinch of vanilla sugar
- 250g mascarpone cheese
- 1 tablespoon powdered sugar
Instructions:
- Line a 20-22cm springform pan with parchment paper.
- Blend 170g of Oreo cookies with melted butter to form the crust. Press into the bottom of the pan and refrigerate.
- Mix eggs and sugar briefly, then incorporate cream cheese, heavy cream, flours, and vanilla sugar just until combined. Pour over the crust. Break some Oreos into the filling.
- Bake at 150°C (302°F) for about 90 minutes. Cool in a slightly open oven, then chill overnight in the refrigerator.
