Ingredients:

  • Flour: 160g
  • Baking powder: 1/2 sachet
  • Eggs: 4
  • Sugar: 125g
  • Melted and cooled butter: 125g
  • Melted dark chocolate: 100g
  • Speculoos spread: 100g
  • Unsweetened cocoa powder: 20 g

Instructions:

  1. Make small mounds of speculoos spread on parchment paper and freeze.
  2. Whisk eggs and sugar until light.
  3. Add the flour, cocoa powder and baking powder.
  4. Add the melted butter.
  5. Fill the bottom of the madeleine molds with dough.
  6. Place a ball of frozen speculoos in each and cover with more dough.
  7. Freeze for 10 minutes for the thermal shock effect.
  8. Bake at 220°C (428°F) for 10 minutes.
  9. Unmold the madeleines, coat the molds with melted chocolate, then put the madeleines back in to set the chocolate shells.
