• 1/2 cup almonds
• 1 cup oatmeal
• 1/2 cup 82% butter, room temperature
• 1/2 cup sugar
• 1 cup all-purpose flour
• 1 large egg
• 1 teaspoon of cinnamon
• 1.5 teaspoons baking powder

1. In a mixing bowl, beat together the egg, sugar and butter until light and fluffy.
2. Use a blender to finely grind the almonds into small pieces or crush them with a rolling pin.
3. Add the ground almonds, oats, flour, cinnamon and baking powder to the creamy mixture and stir until well combined.
4. Form the dough into small balls of around 60 grams each and place them spaced apart on a baking tray.
