Ingredients:
- 200 grams of all-purpose flour
- 100 grams of pistachio flour (or additional all-purpose flour)
- 100 ml milk, room temperature
- 75 grams of brown sugar
- 1 sachet of baking powder
- 60 grams of vegetable oil
- A pinch of salt
- For filling and decoration:
- 200 grams of pistachio cream, plus a little more for garnish
- Berry jam, as needed
- Chopped pistachios, as needed
Instructions:
- In a bowl, mix the sugar, the two flours, the baking powder and a pinch of salt.
- Gradually add the milk and oil, mixing until you obtain a crumbly dough. The texture should resemble streusel; it will not form a smooth paste.
- Line a 22cm tart tin with baking paper. Press 3/4 of the crumbly mixture into the pan to form the base.
- Spread a thin layer of red fruit jam on the bottom, then add a layer of pistachio cream.
- Crumble the remaining dough mixture over it.
- Bake in a preheated fan oven at 180°C (356°F) for approximately 25-30 minutes.
- Once cooled, finish by adding more pistachio cream and a pinch of crushed pistachios.
