Ingredients:
- 1 sheet of puff pastry
- 2 apples of your choice (e.g. Honeycrisp and Granny Smith), diced (peeling is optional)
- 1 teaspoon of cinnamon
- 2 teaspoons arrowroot starch (or cornstarch)
- 1/4 cup cane sugar
- Melted vegan butter or vegetable milk, for brushing
Directions:
- Preheat your oven to 400°F (204°C) and line a baking sheet with parchment paper.
- Before removing the puff pastry from the refrigerator, prepare the filling by mixing the diced apples, sugar, cinnamon and arrowroot starch in a bowl. Put aside.
- Remove the puff pastry from its packaging and roll it out lightly. Use a pumpkin cookie cutter to cut out 8 shapes.
- Place half of the pumpkin shapes on the prepared baking sheet. Pour a few teaspoons of apple filling onto each shape.
