Oven-roasted vegetables with aromatic spices

Ingredients:
Vegetables:
- 1 whole cauliflower
- 1 whole broccoli
- 3 medium potatoes
- 1 red pepper
- 2 large carrots
Spicy olive oil sauce:
- 70 ml olive oil
- 3 cloves of garlic, grated
- 1 teaspoon of black pepper
- 1 small teaspoon of dried thyme
- 1 teaspoon of curry powder
- 1/2 teaspoon red pepper flakes
- 1/2 teaspoon chili powder
- Salt, to taste
Instructions:
- Start by preheating your oven to 200°C (392°F).
- Cut the cauliflower and broccoli into florets. If necessary, blanch them for a moment in boiling water then drain them. This step is for those who prefer their vegetables with a softer texture.
- Thinly slice the potatoes and carrots. Cut the red pepper into strips.
- Arrange all vegetables on a baking sheet in a single layer to ensure even cooking.
- In a small bowl, combine olive oil, grated garlic, black pepper, thyme, curry powder, red pepper flakes, chili powder, and salt to create the sauce.
- Pour the sauce over the vegetables on the tray and toss them until they are well coated with the seasoning.
- Place the tray in the preheated oven and roast the vegetables for 40 minutes. Halfway through cooking, about 20 minutes, stir the vegetables well so they roast evenly.
- While the vegetables are roasting, you can make a garlic yogurt side dish by simply mixing yogurt with minced garlic and a pinch of salt.
Serve:
- Once the vegetables are tender and well caramelized, remove them from the oven.
- Serve the roasted vegetables with a dollop of garlic yogurt on the side.
