- 4 eggs
- A pinch of salt
- 5 tablespoons of sugar
- 1 sachet of vanilla sugar
- 60 ml of milk
- 1 teaspoon of baking powder
- 130g flour
- 600 ml of milk
- 5 tablespoons of sugar
- 200 ml) milk
- 2 packets of vanilla pudding mix
- 1 sachet of gelatin (pre-soaked in 4 tablespoons of water)
- 300 ml heavy cream
- 6-8 bananas
- 3-4 tablespoons of apricot jam
- 300 ml heavy cream
- 250g of chocolate
Instructions:
- First, prepare the custard by boiling 600 ml of milk with the sugar. Mix 200 ml of milk with the pudding mixture, add to the boiling milk and cook until thickened. Stir in the gelatin until dissolved. Cover with plastic wrap and let cool.
- Separate the eggs. Beat the egg whites with the salt until stiff. In another bowl, whisk the yolks with the sugar and vanilla sugar, then add the milk, baking powder and flour. Gently fold in the egg whites. Pour into a buttered and floured baking dish and bake at 200°C (392°F) for about 20 minutes.
- Once the custard has cooled, whip it and add the heavy whipped cream.
- Spread the apricot jam over the cooled cake, layer the banana slices (treated with lemon juice to prevent browning) and top with the vanilla custard. Refrigerate to set.
- For the ganache, heat 300 ml of heavy cream and melt the chocolate. Let cool slightly then pour over the cake.
